雪里蕻的功效和作用
春天是草木新生,百草萌動的季節,也是養肝護肝的黃金期。開春后很多新鮮時蔬和應季野菜大量上市,其中不乏一些養肝的佳品。咱們要抓住養肝的好時機,常吃一些“天然養肝菜”,讓身體更加健康有活力!

春天養肝,這些菜別錯過

薺菜
薺菜有“護生草”的美譽,中醫認為它性味甘涼,有清肝明目,和中益胃的功效,可以疏肝理氣,消水腫而不傷脾胃。

它的鈣、鉀、鐵等營養元素也很豐富,還具有補鈣、降脂、護血管等作用。
薺菜豬肝湯

1、豬肝洗凈切片,加水浸泡10分鐘撈出,加鹽、淀粉抓勻。薺菜洗凈,焯水20秒,撈出切段備用。
2、另起鍋加水燒開,放入姜片和豬肝煮熟,撇去浮沫,下入薺菜、枸杞,加鹽、胡椒粉調味即可。

薺菜有疏肝養肝的功效,豬肝補血,枸杞明目,春季常喝這碗湯,有助于護肝。
但要注意,肝臟中膽固醇含量比較高,有嚴重心腦血管疾病,血脂高的人要少喝。

春筍
春筍甘涼,可以疏肝理氣,春天食用,符合減酸增甘的飲食原則,對養肝也有幫助。

它還具有潤腸通便、通利血脈的作用,尤其適合便秘、胃口不好、痰濕體質的人群。
雪菜三鮮
春季應肝,且宜省酸增甘以養脾,春筍+蠶豆正是養肝健脾的好搭配!

1、春筍劈半,開水下鍋焯水,放點鹽,春筍皮軟嫩后過涼水剝皮,嫩部切段備用。
2、蠶豆焯水、過涼去皮;雞腿肉切片,加入鹽、水、生粉、腌制上漿。
3、鍋底多油,雞肉下鍋滑開,翻炒至變色;加入蔥姜末煸香,下入雪菜、春筍;加入蠔油,下入蠶豆;最后少放鹽,加糖;關火出鍋。

豌豆苗
豌豆養肝祛濕,豌豆苗青色入肝,抒發肝氣,它富含纖維素,有助于通便。還有利水消腫、和中健脾、生津止渴的作用。

自發豌豆苗
豌豆苗和豆芽等常見的芽苗菜相比不太常見,但可以自己購買種子在家發制。

做法:豌豆苗種子泡一晚上水,發苗盒鋪廚房紙巾噴濕,放上種子,蓋上濕的紗布,等種子發芽后去掉紗布見光,每天噴水,長到10厘米左右就可以吃了。它可以吃好幾茬,收割的時候保留一部分根和芽可以再生長。

菠菜
菠菜有滋陰平肝、清理腸胃熱毒的功效,有助于預防春季里因肝陰不足引起的高血壓、頭痛目眩和貧血等。
它還富含葉黃素、β胡蘿卜素等營養素,對護眼明目、提高免疫力都有好處。

菠菜根中的營養一點不比葉子少,春天比較干燥,容易發生便秘,用菠菜根煮水喝可以緩解這個問題。
潤腸通便茶

做法:100克菠菜根、10克銀耳,加入適量水,大火煮30分鐘即可。

韭菜
李時珍在《本草綱目》里稱韭菜為“肝之菜”。它含有揮發性精油及硫化物等特殊成分,散發獨特的辛香氣味,有助于疏調肝氣,增進食欲,增強消化功能。

它還是有名的“起陽草”、“洗腸草”、“活血菜”,有助于振奮陽氣、通腸活血。
新三樣菜

做法:木耳、萵筍切絲焯熟撈出裝盤,韭菜切碎,放入生抽、醋、鹽、蔥油調勻,然后把調味汁和韭菜一起倒在焯好的菜上拌勻即可。
萵筍和木耳也是護血管的高手,萵筍色綠入肝,對疏肝氣也有幫助。

茵陳是春季常見的野菜,藥食同源,入肝膽經,被稱為“養肝第一草”。

茵陳大棗湯

20克茵陳、3枚大棗,加水煮15-20分鐘即可,還可以加入少量冰糖調味。

胡蘿卜富含胡蘿卜素,進入體內后轉化成維生素A,不僅能保護黏膜,提高免疫力,還能夠幫助肝臟細胞的修復,對緩解夜盲癥和干眼癥也有幫助。

芹菜
春天肝氣旺盛,容易導致肝陽上亢,出現口干、頭暈、失眠等問題。芹菜有清熱平肝、祛風安神的作用,還能平穩血壓,正適合現在食用。
